Tis' the Season!!

Tis' the Season....to enjoy yummy Christmas desserts! This is my favorite time of the year. I love the lights, the music, and the togetherness. But let's get real- I LOVE all the food! One of my favorite things to do is get a delicious cup of hot chocolate and add some Peppermint Schnapps to it. That chocolate peppermint is so yummy! So I thought- why not make this into a cupcake?!? That lead me to my Chocolate Peppermint Truffle Cupcake! I started with my original chocolate cake batter and put a delicious  chocolate peppermint truffle inside each tin and baked. The truffles melt when being baked and creates a nice little "crust" on the bottom of each cupcake. Then I added some Peppermint Schnapps to my chocolate buttercream frosting. Lastly, I garnished with a crunched candy cane. Now this cupcake is Christmas. Enjoy!!

The truffle crust is hard to see but there is a little truffle layer on the bottom.

Are You Ready for Some Football?!?

Are you ready for some football?!? As most of you know, I'm a HUGE football fan. I love the passion and intensity of the game. So this post isn't so much about my new cupcakes or the wonderful taste of my treats- it's about school spirit and pride! Below are some pictures for my football day cupcakes. I had to do one for my Bears- I have much bigger ideas for a bear but this is the first try. No worries bears, the next one will be much more fierce- Sic em! The next cupcake is for Sean's dawgs. He is a huge UGA. Go Dawgs!! The last one is for the Iowa Hawkeyes....and there's a reason there is only one of them- turns out the hawkeye is very hard to re-create. Go Hawks! I hope you enjoy my football cupcakes- more on the way!

Fruity Pebbles aka The Troy

I wanted to do a cereal cupcake but couldn't decide which cereal to use. My brother, Troy, is obsessed with cereal so I thought he would be a good person to pick. Troy picked Fruity Pebbles. I haven't had Fruity Pebbles in a long time- I forgot how good they are! I used my basic vanilla cupcake batter and mixed the cereal with it and baked. The fruity pebbles actually float when they bake so when you bite into the cupcake there is a nice crunch. Then I used my classic vanilla buttercream frosting and garnished with the pebbles. All in all- it's a delicious fruity sweet cupcake that takes me back to my childhood. I named this "The Troy" because he is one of the few adults who is still a child at heart. Troy and I are 2 years apart and we were always close growing up. We shared friends and he drove me to school every day the first 2 years of high school. We lived across the courtyard from each other in our apartment complex in college and he is the only reason I passed accounting in college. Troy- you might not be able to taste your cupcake for a while (being in London and all) but I know others will enjoy them! Introducing "The Troy"! Love you bro!

Oreo Cheesecake Cupcake aka The Seano

This is The Seano! It's an Oreo Cheesecake Cupcake. I put an Oreo in the bottom of the cup for a crust. The cupcake is a cheesecake with bits of Oreo in it. I topped it off with my homemade very vanilla whip cream and an Oreo garnish. Now I wasn't thrilled about this at first since it's really not "cakey" but it is delicious and I'm pretty sure with be a hit. I really do have Sean to thank for this one- he told me exactly what he wanted. Sean is amazing. He supports, encourages, and pushes me to better Mmmm K Cupcakes. He is one of the few people who will put me in my place and love me at the same time. He is absolutely my favorite person in the world. I hope everyone loves The Seano as much as I love him- love you Seano!!

Stawberry aka The McNab

Here is my strawberry cupcake with cream cheese frosting. I use fresh strawberries in my batter to give it a really strong flavor- and really what cupcake can be bad with cream cheese frosting! It's pretty basic but still very yummy.  I've named this "The McNab" after one of my best friends, Whitney McNab. Whitney is fabulous. She is full of life and has a huge heart. We haven't lived in the same city in 3 years yet we are closer than we were in college. She is the perfect person to go out with and have a fun night out or to sit at home with and snuggle. She's also a fiery redhead so this cupcake just made sense for her! I hope everyone enjoys a classic- The McNab!

Key Lime aka The Mer!!

My sister, Meridith, is 6 1/2 years older than me. We are completely different but we really do get along great. She taught me how to drive, shares my love for food, and is supportive in all my life decisions- even if she doesn't agree with them. She pretty much rocks so I wanted to make her cupcake really delicious. Mer wanted her cupcake to be a Key Lime cupcake. I must say that I wasn't thrilled with this because I am such a chocolate lover and I would be 100% okay with having every cupcake chocolate. I guess if I really do want to be successful though I need to please the masses. It's a key lime cupcake with a graham cracker crust. (a nice surprise when you bite into it!) Then it's topped with a lime buttercream frosting and a graham cracker garnish. I hope everyone enjoys "The Mer"!! Love you Mer!

My Big Gig

Recently I made cupcakes for EKS&H. (local accounting firm)  I made 13 dozen variety cupcakes. It was a ton of work but so rewarding. Since then I've had multiple people ask for my menu and pricing so that is promising! Here are a few pictures of the prep and finished products. I will post pictures of each flavor soon. Enjoy!

Texas Chocolate aka the "A Lette"

This is my Aunt Marshalette's recipe. I've always called it Texas Chocolate but who knows what it's really called. It's a chocolate cinnamon cupcake with the most wonderful chocolate pecan frosting. Seriously, so good. I grew up with my aunt bringing this as a sheet cake to all our family events. We all call my aunt "Lette" for short. Lette is a pillar. She is one of the strongest, most amazing, beautiful women I know. So it only made sense to make her recipe into a cupcake. Something I want to do for my bakery one day is name all my cupcakes after those people in my life who love me and who have supported me through everything....so I am calling this cupcake the "A Lette". It is also one of my best sellers- so thanks Aunt Marshalette!!

Warning: X Rated Cupcakes!

I got to bake for a bachelorette party! I really struggled with how to do this. I decided to go with my Devil's Food cupcake (kind of fitting for a bach party!) with my buttercream frosting. Then I melted white chocolate and dyed it "flesh" color- then I poured into a mold and decorated with black. They were a hit at the party and a good laugh!

Easter!

I was so lucky to get to bake cupcakes for a fundraiser at the Malley Nursing Home in Northglenn. I had so much fun! I couldn't have done it without Sean though- too many cupcakes and not enough hours was pretty stressful- but I was lucky enough to have a great support system and who helped me in the kitchen!

 Malley Nursing Home Fundraiser

I went to Amarillo for Easter to be with my family. We had the Sharp clan over for dinner so I made cupcakes. There were 38 people there! I was pretty nervous about baking for my family because they are all foodies (especially the dessert!) and they are VERY honest. Thankfully it turned out great! Everyone game me positive feedback and tons of support. I am so blessed!!

Chocolate Maple Bacon

Last weekend I was at Syrup enjoying my Ghirardelli chocolate chunk pancakes and a side of bacon and it was delicious! So I started thinking how good this would be in a cupcake. I took my chocolate cupcake recipe and added some maple syrup and bacon bits to it. Then I added maple syrup to my standard buttercream frosting. Lastly, I garnished it with a bite of chocolate covered bacon. Call me crazy- but it is awesome! Enjoy!
